Luis Uriarte

CEO

A natural of Spain, Luis Uriarte came to the U.S. as an immigrant in 1998 and became a permanent resident of the United States. Luis is the CEO and founder of Cathedral Plumbing of Texas and now of Cathedral Italian Bistro. Mr. Uriarte also founded MiView Integrated Solutions which is a field management application for Cathedral Plumbing and the construction industry. Luis is clear that his goal for the bistro is not to be a restauranteur, but to keep the focus on building something that rewards and shares success with those that helped to build Cathedral Plumbing.

Chef Federico Fernandez hails from El Salvador and moved to the U.S. in the early 90’s. He worked for the Louisiana restaurant Ralph & Kacoo’s and moved to Texas where he has worked for numerous establishments including the Grand Kempinski Hotel, Outback Steak House, Hilton Dallas Lincoln Center and Savor in Klyde Warren Park. Chef Federico saw a great opportunity to join the team at Cathedral Italian Bistro where he continues to pursue his passions in food creation and kitchen management.

Daniel Rosales

Executive Pastry Chef

Chef Daniel Rosales was born and raised in the outlying suburbs of Detroit, MI. He has been baking since he was tall enough to reach the countertops, & began his professional career in high school, taking orders for cakes /desserts from home. Immediately after graduating, Daniel moved to Dallas, TX, and enrolled in culinary school at Collin College, eventually graduating in 2018 with an Associates Degree in Baking & Pastry Arts, as well as a Certificate in Advanced Pastry Arts. From there, various job opportunities with several incredible pastry chefs across DFW, lead him to excel through his career. At 23 , he secured the role of VIP Pastry Chef at the 2021 US Open in NYC; and a few months later made his way onto the Food Network where he competed on Holiday Wars Season 4, surviving every round of the competition (and winning a few!) to make it to the season finale where he finished as the runner-up. Always striving to push the limits of what a dessert can be, or what can be a dessert, Chef Daniel continues to experiment with new techniques and flavors in every dish he creates. His passion for his craft eventually led him to join the team at Cathedral Italian Bistro, as Executive Pastry Chef, creating the restaurant’s house-made desserts, breads, gelatos, & baked goods!

Ryan Benton

Front of House Manager

Ryan Benton is originally from Hawaii where he worked in the Tourism Industry. He moved to Denton, Texas in 2018 to pursue a B.S. in Urban Policy and Planning and then worked in Ireland, South Korea and Hong Kong. Ryan moved to Landry’s Saltgrass restaurant and then jumped at the opportunity to join the Cathedral Italian Bistro team where he’s excited about the unique concept.

Andy Aouiguer

Food & Beverage Manager

Andy graduated as an engineer in mechanics from the Polytechnic University of Turin in Italy. Andy grew up in the food and wine industry in Paris where he was born and raised. He moved to San Francisco in 1997 where he managed Basil Leaf and Amalfi Trattoria and is very happy to bring his European touch to Cathedral Italian Bistro.
